There is no native way to disable Apple Music from playing when it connects to CarPlay, but Here are a few workarounds to keep it from happening

Expected Outcome: When you connect your phone to your car music will not auto play
Tools Required: A Lightning cable to connect your iPhone to your car
Method 1: Delete Apple Music from iPhone
If you don't use Apple Music, you can just delete the app and all contents from your iPhone. This will stop the autoplay of Apple Music. This is a solution for those who listen to Spotify, Prime, Audible, Podcasts, Etc. and never listen to music using the Apple Music App.
Method 2: Disconnect iPhone from vehicle's Bluetooth
- Go to the settings app on your iPhone
- In the settings app, tap on the option, "Bluetooth"
- Disable Bluetooth with the toggle at the top right of the screen
- (Alternative) If you do not want to disable Bluetooth completely you can select your car from the list of devices and forget the device
- After you select you car from the list tap on "Forget This Device"
Note that if you use this method you will only be able to use CarPlay if your iPhone is connected via USB to your car.
Method 3: Disable CarPlay while locked
- Go to the settings app on your iPhone
- In the search box search for "carplay" then tap on Carplay
- Select your car
- Click on the toggle to disable "Allow Car Play While Locked"
